Start with the experience you want, not the river. If you're chasing the iconic, postcard European Christmas — half-timbered towns, cathedral-backdrop markets, glühwein and bratwurst under strings of lights — the Rhine or Danube is your river. Both carry the most sailings, the largest ships, and the widest range of December departures. The Rhine is shorter, denser, and more castle-studded; the Danube strings together three capital cities (Vienna, Bratislava, Budapest) for a more imperial, grand-scale feel.
If you've already done the classics — or simply prefer fewer crowds — look to the quieter rivers. The Moselle is the Rhine's prettier, wine-soaked cousin: Riesling glühwein, vineyard-backed markets, and the steepest terraced vines in the world. The Main is the fairytale half-timbered Germany of Bamberg, Würzburg, and Miltenberg, usually sailed as part of a longer Rhine-to-Danube "Grand" itinerary. Both reward travelers who'd rather wander a candle-lit lane than jostle through a cathedral square.
For something distinctly non-German, choose the Seine (Paris to Normandy — chic, gourmet, French vin chaud and gaufres instead of bratwurst), the Rhône (Burgundy to Provence — truffle stalls, Côtes du Rhône, and noticeably milder December weather), or the Douro (Porto to Salamanca — the warmest and least-crowded of the seven, with port-wine tastings and fado music in place of glühwein).
